Upcoming Third Thursdays
We will of course continue our wine thematic Third Thursday Dinners each month that feature a Four Course Menu created by Chef Jerry Pelligrino and wine paired by Sommelier, Chris Coker. Third Thursday Menus will be posted on our website approximately two (2) weeks prior to the dinner. Third Thursday begins at 6:30 PM.

July 18th: The Summer Celebration Dinner Reception at 6:30, Dinner 7:00 $75 per guest, inclusive of tax
This July with the re-opening of the Baltimore City Farmers’ Market, Chef Jerry Pelligrino will prepare three savory dishes and one dessert from the bounty of spring vegetables, fruits, cheeses and meats. Sommelier Chris Coker already has many wonderful white and red wines to pair with these perfect seasonal dishes. Please join us for this special dinner!
August 20th: Annual Rosé Wine Dinner $75 not inclusive of gratuity.
Please join us for our annual celebration of the pink libation! Chef Pellegrino and his staff will prepare a seasonally inspired Four Course Menu paired with rosé wines from around the world. Spain, France, Italy and of course the good ol’ USA will be represented. This dinner should never be missed! Reservations are required.
July 18th: The Summer September 17th: Chris Coker Birthday Wine Dinner $75 not inclusive of gratuity.
Please join our Sommelier/Manager, Chris Coker this September to celebrate #39.
Chris will select wines that have peaked his interest from Spain, Italy, Germany and Argentina and perhaps an American wine or two may find its way into this dinner.

The Corks’ Classic Wine Dinner

June 26th: Bordeaux vs. Napa Reception at 6:30, Dinner 7:00 $195 per guest, not inclusive of tax or gratuity
Please join Chefs Jerry Pellegrino and Sommelier Chris Coker as they explore the current vintages of boutique Napa Valley Cabernet based wines and classic Bordeaux. Everyone has their favorites, but no one leaves dissatisfied! Chef Levi Briggs will prepare a five course menu and Sommelier Chris Coker will pair multiple wines with each course.

Hugh Sisson joins us this month with an admirable array of delicious beers and perhaps one or two surprises. Chris Coker is armed with his arsenal of soul satisfying wines. Chef Dan Fournier has created a seasonally inspired four course menu. The Guest will be unable to squelch giddiness and joy! Reservations Required!

Monday, August 3rd, 2009: Erin Tyler vs. Chris Coker: The Rematch!
This unique idea was first proposed by Hugh Sisson of Clipper City Brewery and developed into a “throw down” one beer filled evening between Sommelier Chris Coker and his beer representative at Legends Distributing, Erin Tyler. Chef Dan Fournier will create a four course menu and Chris Coker will choose one wine and the Beer Professional will choose one beer. The guest is the winner with the experience of two very different beverages and how each work beautifully with the dish.

WINE & DINE WITH CHEF PELLEGRINO
The final Monday of every month, Chef Pellegrino will hold a thematic cooking class. Class begins at 6:30 PM with a reception wine in our second floor kitchen where you will aid in the preparation of your three course meal. You will end the evening around the second floor communal table and feast on the fruits of your labor. A white and a red wine will be paired with dinner. Wine & Dine with Chef Pellegrino is $79 all inclusive per guest unless otherwise noted. Additional Wine & Dines with Chef Pellegrino may be added each month.

Monday June 29th: The Perfect Summertime Party
Join Chef Pellegrino in creating tempting appetizers and make ahead entrees for your next summertime party. Learn to let your creative juices flow in blending unusual flavors and textures. Make ahead dishes allow you time to enjoy your guests while still serving dishes that will wow them!

Monday August 31st: The Tastes of Provence ($79 per person)
Don’t pass up this opportunity to learn to use fresh-from-the-farm produce to create the specialties from the south of France. Chef Pellegrino will create the perfect menu to highlight the wondrous flavors and textures of this region’s delectable dishes. Sommelier Chris Coker will pair the dishes with wines that awaken and tease your palate during each sumptuous dish.

THE "HOW TO" SERIES
Chef Pellegrino has scheduled a new How To Series which will help guide guests through the skills needed to accomplish tasks that are so important to all great cooks.

Sunday July 12, August 9, and September 13th, 7 AM: How to Series –How to Shop at the Farmers’ Market
($55 per person)

Join Chef Pellegrino at the Farmers’ Market at 7 am, guzzle great coffee, meet the farmers and vendors and purchase your brunch ingredients which you will bring back to Corks and prepare a feast!

Sunday July 19: How to Series – The Art of making Sausage ($45 per person)
Chef Pellegrino has recently taken an interest in the creation of charcuterie. He and his staff are currently making a dozen fresh and aged sausages that we sell as appetizers, entrees and sides for Sunday Brunch. Please join him this Sunday to learn a few secrets to this lost science.

Sunday August 23rd: How to Make Caramel ($45 per person)
The world of desserts would be quite deficient if it weren’t for caramel. Join Chef Pellegrino as he teaches the basics of caramel and the sensational desserts and sweets that you will be able to make with it!

Sunday, September 6th: How to Make Soufflés ($45 per person)
The lightest and airiest of all desserts definitely needs to be handled with care. Please join Chef Pellegrino as he teaches you the fool proof recipes to make both savory and sweet soufflés.

CLASSIC FOOD AND WINE PAIRING Classes:
These classes examine decadent ingredients and their classic wine pairing. The class is part cooking class and part wine tasting ending in an incredible dinner. It is an evening with Chef Pellegrino designed to enlighten as well as entertain.

Spring Lamb and Grenache, Sunday June 28th ($125per person) 6:30PM
Join Chef Pellegrino as he celebrates the gorgeous taste of lamb. Chef will explore the varied cuts of lamb as well as accompanying sauces and side dishes. This class will also explore the wine regions of Spain, France and Santa Barbara County, home to some of the greatest expressions of the Grenache grape

Zinfandel and the Grill, Sunday July 26th ($125.00 per person) 6:30 PM Limited To 8 Guests
This may be one of the most sought after classes at the year! Chef Pellegrino may be one of the best persons in the city to grill you dinner. Join him for one of the most unique cooking experiences ever. He’s leaving the details a secret, but promises you won’t be disappointed.

Shellfish and White Wine, Sunday, August 30th ($125.00 per person) 6:30 PM
Crab, Shrimp, Oysters, Clams, Mussels and Scallops all pair beautifully with White Wine, but which white wine? Please join Chef Pellegrino as he teaches the various preparations of shellfish and instructs you how each flavor profile is enhanced by a different white wine.

MONDAY: Corks Foie Gras Night
You may have to walk through picket lines to sample one of the most celebrated and reviled delicacies in the culinary world. Chefs Briggs and Pellegrino will prepare multiple preparations of Foie Gras each Monday for the unfathomable price of $7 and Chris Coker will choose a selection of wines by the glass and bottle that pairs perfectly with each preparation.

TUESDAY: Corks Steak & Cabernet Night
Steak and Cabernet Night has become one of our most popular events. Every Tuesday Chef Pellegrino and his chefs offer five cuts of beef for half the original price. Chris Coker has also selected at least five Cabernet Sauvignon based wines from renowned growing regions such as Napa, Sonoma, Washington State, Chile and Argentina at half their original price.

WEDNESDAY: Pasta Night at Corks
Every Wednesday evening Corks will celebrate Italy with fresh pastas and housemade sauces as well as a small Italian wine list. Chef Pellegrino has prepared 5 different types of pasta and 4 fresh sauces, most that you will mix and match for $9.00 a bowl. Sommelier, Chris Coker has selected a half dozen Italian red, white and sparkling wines for you to wash down your pasta!

THURSDAY: Hot Dog Night at Corks
On Thursdays Corks’ celebrates another American favorite, the Hot Dog. We are now offering an All Beef Hot Dog and a Kobe Beef Hot Dog from Snake River Farms as well as all the traditional fixings such as Chili, Sauerkraut and Caramelized Onions.

FRIDAY: Ladies Cocktail Night
Fridays we want to see all the Ladies in our lives sip on some fancy cocktails at the bar with host/bartender/mixologist Jenna Robison. Jenna and Chris Coker will create 5 cocktails each for $5 and they will be available all night long for the ladies.

SUNDAY BRUNCH
Corks offers brunch from 10:00 am for the early birds until 4:00 pm for the hardcore partiers. And do not forget $8 all you can drink mimosas and bloody marys. (4:00 pm – 10:00 pm) Corks’ brings back an old favorite, The Farmers Market Multi-Course Menu for $30. Each Sunday morning Chef Jerry Pellegrino awakens early to score the freshest produce and meats from the Baltimore Farmers Market and creates a multi-course menu that will be available for $30 after 4:00 PM.
